Healthy Protein Banana Muffins

These healthy protein banana muffins are made with bananas, oats, whey protein and Greek yogurt. They are soft, naturally sweet and perfect as a quick breakfast or high protein snack.

Ingredients

  • 2 ripe bananas (about 240 g)
  • 1 tablespoon peanut butter (16 g)
  • 1 scoop whey protein powder (about 30 g)
  • 2 large eggs (about 110 g)
  • 1 cup instant oats (90 g)
  • 1 tablespoon vanilla sugar (12 g)
  • 1 teaspoon cinnamon (2 g)
  • 1/4 cup dark chocolate pieces (40 g)
  • 2 cups skyr or Greek yogurt (450 g)
  • 1 tablespoon baking powder (12 g)
  • 1/2 cup blueberries (75 g)
  • 2 to 3 tablespoons maple syrup (40–60 g)

Method

  1. Preheat the oven to 200°C (about 390°F).
  2. Mash the bananas in a large bowl until smooth.
  3. Add the eggs, Greek yogurt and peanut butter and mix until combined.
  4. Stir in the whey protein, instant oats, vanilla sugar, cinnamon and baking powder.
  5. Add maple syrup and gently mix the batter until everything is just combined. Do not overmix the batter.
  6. Fold in the blueberries and dark chocolate pieces.
  7. Fill the batter evenly into a muffin tray lined with muffin cups.
  8. Bake the muffins for about 18 to 22 minutes until the tops are golden. The muffins are done when they are lightly golden and spring back slightly when you press the top.
  9. Let the muffins cool slightly before removing them from the tray.
