Greek Yogurt Waffles

These easy Greek yogurt waffles are soft and fluffy inside, lightly golden outside, and made with whole wheat flour. Greek yogurt adds moisture and protein, while sparkling water helps create a lighter texture. The small batch recipe makes three waffles and requires no butter or oil in the batter.

Ingredients

  • cup plus 1 tablespoon (100 g low fat Greek yogurt)
  • 1 large egg
  • ¾ cup plus 1 tablespoon (100 g whole wheat flour)
  • 1 tablespoon plus 2 teaspoons (25 ml sparkling water)
  • 1 tablespoon plus 2 teaspoons (25 ml milk)
  • 1 tablespoon (20 g maple syrup)
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • 1 pinch of salt

Method

  1. Preheat the waffle maker according to the manufacturer’s instructions. Lightly grease it if necessary.
  2. Add the Greek yogurt, egg, sparkling water, milk, and maple syrup to a medium mixing bowl. Whisk until smooth and evenly combined.
  3. Add the whole wheat flour, cinnamon, baking powder, and salt.
  4. Stir gently until the ingredients are just combined. Do not overmix the batter.
  5. Let the batter rest for 5 minutes. This gives the whole wheat flour time to absorb the liquid and helps create a more even texture.
  6. Divide the batter between the preheated waffle plates. The exact amount needed will depend on the size of your waffle maker.
  7. Cook until the waffles are golden, set in the center, and easy to remove from the waffle maker.
  8. Serve warm with low fat Greek yogurt, fresh blackberries, a little powdered sugar, or your favorite toppings.

For the most reliable texture, use the gram measurements for the Greek yogurt and whole wheat flour. Measuring these ingredients by volume can vary depending on the brand and how tightly the flour is packed.
Do not skip the 5 minute resting time. Whole wheat flour absorbs more liquid than refined flour, and the short rest helps the batter thicken evenly.
Place the finished waffles on a wire rack instead of stacking them. This allows steam to escape and helps prevent the surface from becoming too soft.
