Ingredients

  • 1/2 cup whole wheat flour (50 g)
  • 1/2 cup skyr or Greek yogurt (100 g)
  • 1/4 cup light cream cheese (50 g)
  • 1 medium banana (approx. 120 g)
  • 1 cup mixed fruit (300 g)
  • 2 large eggs (100 g)
  • 1/3 cup oat milk (100 ml)
  • 1 tbsp honey (10 g)
  • 1 tsp baking cocoa (5 g)
  • 1 tbsp almond butter (7 g)
  • 1 packet vanilla sugar (8 g)
  • 1/2 tsp baking soda

Method

  1. Mash the banana in a bowl until smooth.
  2. Add eggs, skyr, cream cheese and oat milk. Mix well.
  3. Stir in flour, cocoa, vanilla sugar and baking soda.
  4. Add almond butter and honey. Mix until smooth batter forms.
  5. Fold in the fruit.
  6. Pour into a bowl.
  7. Microwave on high (600W) for 4–6 minutes until set.
  8. Let cool slightly before eating.

Notes

Protein  option:
Add 1 scoop vanilla protein powder (approx. 25–30 g) If needed, add a splash of milk to keep batter smooth
Air fryer: 160°C (320°F) for 12–15 minutes
Oven: 180°C (350°F) for 20–25 minutes
Texture tip: Microwave = softer (for a quick snack)
Oven/Air fryer = cake (for cake dessert)
