- 1/2 cup whole wheat flour (50 g)
- 1/2 cup skyr or Greek yogurt (100 g)
- 1/4 cup light cream cheese (50 g)
- 1 medium banana (approx. 120 g)
- 1 cup mixed fruit (300 g)
- 2 large eggs (100 g)
- 1/3 cup oat milk (100 ml)
- 1 tbsp honey (10 g)
- 1 tsp baking cocoa (5 g)
- 1 tbsp almond butter (7 g)
- 1 packet vanilla sugar (8 g)
- 1/2 tsp baking soda
Method
- Mash the banana in a bowl until smooth.
- Add eggs, skyr, cream cheese and oat milk. Mix well.
- Stir in flour, cocoa, vanilla sugar and baking soda.
- Add almond butter and honey. Mix until smooth batter forms.
- Fold in the fruit.
- Pour into a bowl.
- Microwave on high (600W) for 4–6 minutes until set.
- Let cool slightly before eating.

Protein option:
Add 1 scoop vanilla protein powder (approx. 25–30 g) If needed, add a splash of milk to keep batter smooth
Air fryer: 160°C (320°F) for 12–15 minutes
Oven: 180°C (350°F) for 20–25 minutes
Texture tip: Microwave = softer (for a quick snack)
Oven/Air fryer = cake (for cake dessert)
